Ingredients:
1 cup rice
1 cup coconut milk
1 cup water
1/2 teaspoon salt, or to taste
Optional: 1/4 cup shredded coconut (for added texture and flavor)
Instructions:
Cooking in the pot
1. Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
2. In a saucepan, combine the rinsed rice, coconut milk, water, coconut oil, and salt.
3. Place the saucepan over medium-high heat and bring the mixture to a boil.
4. Once it boils, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for about 15-20 minutes or until the rice is tender and has absorbed the liquid.
5. Once cooked, let the rice sit, covered, for an additional 5 minutes. Then, fluff the rice with a fork to separate the grains.
6. If you're using shredded coconut, you can toast it in a dry pan over medium heat until golden brown. Sprinkle the toasted coconut over the cooked rice for added flavor and texture.
7. Serve the coconut rice as a side dish with your favorite curry, grilled vegetables, or protein.
